Yam Ninja Salad Dressing

Caramelized yam meets traditional Japanese salad dressing.

This dressing has a good kick and goes well with whatever you (karate) chop.

60 minutes | YIELD 600 ml | BLENDED

DIRECTIONS:

  • Preheat oven to 350 F

  • Scrub yam

  • Roast until tender inside

  • Peel and discard skin

  • Cut into chunks

  • Juice oranges + lemon

  • Peel garlic + ginger

  • Slice + reserve two green onions

  • Add all ingredients except green onion to the blender

  • Blend until smooth

  • Add sliced green onion at the end

INGREDIENTS:

  • 1 medium-sized yam, roasted (+/- 1 cup)

  • 1/3 cup freshly squeezed orange & lemon juice (2 oranges, 1 lemon)

  • 1/3 cup rice wine vinegar

  • 1/3 cup flax oil

  • 1/4 cup water

  • 2 cloves garlic

  • 1-inch ginger

  • 2 green onions

VARIATIONS:

  • Serve warm or chilled.

  • Try roasting ginger and garlic.

  • Substitute roasted tomatoes for roasted yam for a red ninja dressing.

  • Delicious on any slaw (finely sliced or grated cabbage, carrot, apple, jicama)
