HEALING TOMATO SOUP

INGREDIENTS:

  • 6 cloves of garlic

  • 1 large onion

  • 1 red bell pepper

  • 1 tsp. dried paprika

  • 5 cups tomatoes, washed and chopped

  • 3 cups Hippocrates soup stock (see Hippocrates soup recipe)

  • 2 tsp. dried oregano

  • 1 tsp. dried basil

  • Filtered water

METHOD:

  • Sauté garlic and onion in 4 tbsp of filtered water on medium heat in a large saucepan until soft; add bell pepper and paprika and cook for 2 more minutes

  • Add the chopped tomatoes and stir well. Let the tomatoes sizzle for a minute or so

  • Add the Hippocrates soup stock, oregano, and dried basil

  • Let simmer on medium to low heat for about 20 minutes or until everything is soft and the liquid has reduced.

  • Blend and add filtered water until the desired thickness.

  • Garnish with some fresh green sprouts, paprika, or black pepper, and serve!
